This is my go to breakfast, and it’s super easy

Assorted Vegetables- I almost always have leftover vegetables and use those. Pretty much anything will work.
1/4 c shredded cheese
6 eggs
1/4 c milk
salt and pepper

Saute veggies until heated through or soft over medium heat in a 12 in oven safe pan. Whisk together the eggs, milk and salt and pepper. Add to pan, and stir in shredded cheese. Place under the broiler, until eggs are set. Slice like a pie.
