Turkey Ricotta Meatballs

This is one that I came up with after having half a container of ricotta left over from lasagna. It’s pretty versatle and you can change up the seasonings to your taste.

120 oz. pkg ground turkey breast

8 oz fat free ricotta

1 small onion, grated

1 clove garlic, grated

1/2 c oats

1 egg

1/8 c parmasean

1 tsp italian seasoning

salt and pepper to taste

Optional: 1/2 pkg of frozen chopped spinach, defrosted and drained

Preheat oven to 400 degrees.

Mix egg, ricotta, onion, garlic, seasonings, parm, oats and spinach together, then add turkey. Mix until combined but do not overmix. If the mixture is very wet, add more oats until it just comes together. Shape into balls (I like to make them pretty small, usually about 20-22 per recipe but you can make them large) and place on a baking sheet. Roast for 15-20 minutes, depending upon size.
