Ham and Noodle Casserole

This is something that my mom used to make all the time when I was younger. It’s a great way to use up leftovers. You can definitely substitute any veggies or meat in this!

1 cup chopped ham (I’ve used chicken and smoke sausage, both are great)
1/2 lb whole wheat egg noodles
2 c veggies
1/2 onion
1 egg
1/2 light sour cream
1/2 cup shredded cheddar (use whatever cheese you love!)
salt and pepper to taste

Cook noodles according to package directions. If you need to cook your veggies, cook them in the cooking water along with the noodles.

Meanwhile, preheat the oven to 350. Spray a 13×9 pan. Mix sour cream, egg, cheese, onion and seasoning together in a bowl. If you desire, brown the ham in a skillet. Add the ham, veggies and noodles to the casserole dish and pour sauce over the top. Mix well. If you desire, top with some extra shredded cheese or breadcrumbs. Bake for 20-25 minutes. Let cool for 5 minutes to set.
