		<description>Hey Mel -- So, now I&#039;m dying to know.  What was the dinner you made that was such a bust?

We tend to take leftovers from dinner for lunch the next day (although I know that not everyone is hip to that). Sometimes I change things up a bit. A roasted chicken from dinner becomes sammiches for lunch. Salmon patties become salmon burgers. A rice dish becomes burritos. That sortofa thing.

That said, lately I&#039;ve been taking time on Sunday afternoons to make salads for lunch.  This week it was a simple pasta salad. Two weeks ago, it was a quinoa salad with black beans, sweet pepper, corn, and chopped spinach with a lime-chile vinaigrette.  Kept great and we could eat it all week.</description>

		<description>Great tip on the brown rice trick, I never would have thought to make it like that!

Although, I do have a $7 rice maker that I can make anything in perfect - quinoa, brown rice, aborrio (sp?) rice - love it!

I usually make things for my lunch that I know my family would never eat - that way I can have my spicy food (and spaghetti squash!) all to myself! :D</description>
