This loaf was a variation of my Banana Crunch Muffins, but I decided to experiment a little with them. I made them with no butter or oil, only with a small amount of applesauce as a replacement and it turned out amazing, very moist even with whole wheat flour. Mr. J ate over half the loaf already, so that should be a good sign!
**Note: I used some white flour to cut the whole wheat. The flour I have is handmilled and therefore, is very coarse. You can certainly do this with all whole wheat and I have done this before, just with commercially available ww flour.
1 1/4 cup whole wheat flour
1/4 cup AP flour
1/2 cup old fashioned oats
3/4 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
4 oz applesauce
1 large egg
1/3 cup skim milk
1 teaspoon vanilla extract
2 medium bananas, mashed
1/2 cup chopped walnuts*
1 teaspoon cinnamon
1/2 teaspoon nutmeg
Mix mashed bananas, egg, milk, applesauce and vanilla together. In a seperate bowl, mix flours, baking powder, oats, cinnamon and nutmeg together. Combine dry and wet until just mixed. Fold in chopped nuts. Bake in a loaf pan in a preheated 350* oven for 50-55 minutes. Let cool for 5 minutes then remove from pan to cool completely.
*You can always add other mix ins as well. I’ve used coconut, cranberry, chocolate chips, granola, pecans etc.
