So I finally decided to be a part of the BSI contest this week. I think it was because I finally had all the ingredients I needed. I’m a forgetful one sometimes!
This is something that I made with my mom this weekend for breakfast. It’s definitely a good one for holidays or brunch. The difference with the picture and this recipe is that my mom could not find a wheat italian loaf and used white instead.
Apple Walnut Baked French Toast
3/4 c brown sugar
1/2 c butter, melted
3 tsp cinnamon
3-4 apples, cored, peeled and thinly sliced. (We used granny smith)
1/2 c dried cranberries
1/2 c walnuts, chopped
1 loaf whole wheat italian bread
6 eggs
1 1/2 c skim milk
1 tsp vanilla
Combine sugar, butter and 1 tsp cinnamon in a 13 x 9 baking dish, and then add apples, walnuts and cranberries. Mix well and spread evenly. Place bread slices on top. Mix eggs, milk and remaining cinnamon and pour mixture over the bread in pan. Cover with foil and refrigerate overnight. Baked covered pan at 375 for 50-55 minutes, uncovering for the last 10 minutes of baking. Serve warm. Serves 12
